Grilled Chicken Bruschetta and Sauteed Broccoli

There is nothing like protein cooked on the grill! Instead of crusty bread, I use a tasty grilled chicken breast to be the home to my Bruschetta. Paired with sauteed broccoli for a nice flavor match.



This is a delicious easy meal to make. Make your Bruschetta topping the night before or early in the morning and allow the flavors to marinate and blend together. Grill some chicken and top with the Bruschetta. You have yourself a quick and easy weeknight meal!


Grilled Chicken Bruschetta

Ingredients:

· 6 chicken breasts (if the breasts are thick, butterfly them/cut them in half)

· 2-pints of grape tomatoes, quartered

· ½ cup red onion chopped fine

· 2 cloves of garlic minced

· 3-tbsp. basil leaves chopped

· 1½-tbsp extra virgin olive oil

· 2-tbsp balsamic vinegar

· Salt and pepper

· Balsamic Glaze

Instructions:

1. Preheat grill over medium-high heat. Rub lightly with a small amount of olive oil. Season with salt and pepper or whatever seasoning you prefer.

2. Grill the chicken for about 3-4 minutes on each side or until no longer pink in the center.

3. In a bowl, combine tomatoes, red onion, garlic, basil, olive oil, balsamic vinegar and salt and pepper to taste.

4. Place tomato mixture over the grilled chicken and drizzle Balsamic Glaze over the top. Serve immediately.


Broccoli Saute

4-cups broccoli florets

3-cloves garlic, minced

1-tsp. red pepper flakes

¼ tsp. salt

2-tsp. olive oil

¼ cup water

Heat oil in a large nonstick skillet over medium heat. Add broccoli, garlic, salt, and red pepper. Saute 3-4 minutes, add ¼ cup water, cover reduce heat to low, cook until tender.
